喚醒老饕味蕾！「Théorie Theory」的新菜揉合美式牛排與法式料理

主打美式牛排融合法式料理的「Théorie Theory」餐廳，近期精選各式春季盛產蔬菜與海陸食材，並由行政主廚賴俊源（Dennis Lai）精心推出多道春季新作，包含「白蘆筍 貝雍火腿血橙」、「法式鴨肝肉派」、「美國極光牧場乾式熟成35天帶骨紐約客」與「白巧克力青檸塔」等。

其中，「白蘆筍、貝雍火腿、血橙」特選歐洲3A等級白蘆筍，搭配法國拜雍火腿與特調荷蘭醬，入口能同時品嚐到白蘆筍的乾淨清甜、火腿的鹹鮮脂香，以及荷蘭醬柔和的酸度，三者在輕盈與深度間取得完美平衡。極考驗基本功的傳統名菜「法式肉派」，外層遵循傳統工法高溫烘烤至金黃酥脆，內餡則精選豬梅花肉與高級鴨肝，以干邑白蘭地和波特酒細心醃製，再揉合開心果、綠胡椒及慢火炒出自然甜味的蘑菇與洋蔥，在酥爽與細膩的對比中展現沉著風味。

主菜則推薦「美國極光牧場乾式熟成35天帶骨紐約客 （24oz）」，經35天恆溫恆濕乾式熟成，經高溫爐火炙烤後，骨邊油脂緩緩釋放，外層形成焦香熟成外殼，內裡則完美封存豐潤肉汁與細緻油花，特別推薦佐上以柬埔寨青胡椒調製的「貢布胡椒醬汁」，其清新草本氣息與醇厚酒香交融，更為頂級肉品增添深邃餘韻。

「Théorie Theory」 開幕至今半年，因應不少饕客對於草飼牛的喜愛，像是一道新菜「澳洲Vintage熟齡牛牛乾式熟成50天丁骨牛排（24oz）」，便能深切品嚐到草飼牛的扎實肉質與天然草本的礦物質風味，最後，甜點則是一道「白巧克力青檸塔」，以酸度鮮明的青檸入餡，入口清亮酸爽，並可品嘗到白巧克力的甜美圓潤，滋味可口。
